I have a 3500 lb ATV winch that specifies a 3/16" galvanized steel aircraft cable. Would your 3/16' nylon coated cable be a suitable replacement? I think so but wanted to confirm.

Possibly, yes, but we would caution that the nylon coating (or any coating for that matter) will eventually wear out and start to fall off. Basic galvanized cable would likely be a more hassle-free choice for the long haul.
