Other than spur straps, nothing else attaches the pads to the shank of one's gaffs?

Not exactly. The climbing spurs have a sleeve with a loop on the top. That loop slides up and inside of the channel on the spur pads, and then the strap passes around and through to secure the spurs to the pad. The strap is providing the ultimate retention, but the pad also does mate with the sleeve on the spurs.
