My waist size is 35ish.... some pants will be a 34 -35 and 36 is too large. Which version is best, undersized or oversized?

That is tough, sounds like you're right on the edge. It somewhat depends on body type. If you have a generally fit/slender build, then you should be able to fit the Size 1. If you're thicker/rounder, then Size 2 might be better. It also depends on if you plan to be layered up over the winter. Given you're in TX I'm guessing you don't layer heavy all that often. You and I are probably pretty close in size, except I'm more of a 35-36 waist. I can fit the Size 1.
