Is the hook on this chain grade 100? Does the chain have a protective coating on it? Or is it bare steel?

No, the hook is not G100 and is rated @ 7300 lbs. The chain itself is G100 and it does have a protective finish, but with use in the woods, that finish will eventually wear off. The chain will likely produce surface rust that shouldn't impede its function or strength.
