Yes, that should work fine. Most installations results in just the eye of the anchor protruding from the ground, and your suggested installation should yield the same end result.
Can you bury the anchor and cable completely in the ground? I have a retaining wall that is leaning. I am in the process of removing the dirt behind it and installing drainage. Can I bury this and then concrete over it? 1" x 8" x 66" Helical Auger Anchor - 11000 lbs Max Capacity
